Zucchini Parmesan Crisps

Zucchini Parmesan Crisps

Servings: 4, Serving Size: 1/2 cup

Ingredients:
2 medium zucchini (about 1 pound)
1 Tbsp olive oil
1/4 cup freshly grated Parmesan cheese
1/4 cup plain breadcrumbs
1/8 tsp salt
fresh black pepper, optional

Directions:
Preheat the oven to 450 degrees F. 
Coat a baking sheet with non-stick spray.
Slice zucchini in to 1/4" thick rounds. 
In a medium bowl, toss the zucchini with the olive oil to coat.
In a small shallow bowl, mix the breadcrumbs, cheese, salt and pepper.
Gently press each round in to the mixture to coat each side. 
Place in a single layer on a the baking sheet.
Bake for 25-30 minutes or until crips.  Serve immediately.
