Polenta Fries

Fabulous!  We leave the seasoning off for the kids.

Polenta Fries
Ingredients:
1 tsp sugar
1/4 tsp salt
1/4 tsp cumin
1/4 tsp chili pepper
Dash cayenne pepper
1, 16 oz tube of polenta (cut in half, then crosswise)
2 Tbsp all-purpose flour
1/4 c canola oil


Directions:
1. In a large bowl, combine sugar, salt, cumin, chili powder and cayenne pepper.  Set aside.
2. Cut polenta in half, then to 6 thin slices and then 4 strips.  Toss with flour to coat.
3. In a large skillet,  heat oil over medium high heat.  Shake off excess flour from polenta.  Add to hot oil.  Cook, turning occassionally for 7-8 mins/side. 
4.  Drain on paper towels.  Place fries in bowl with sugar mixture.  Serve immediately or keep warm in oven at 325.
