Stupid Easy Crock Pot Chicken

I had a babysitter come for the first time in a long time.  The first time ever she was in her teens!  And my kids were confused...

Me: "You're getting a baby sitter tonight."
DD: "A baby sister?"
Me: "No, a baby sitter...  She's a girl."
DD: "Does she have a car seat?"
Me: "No.  She's an older girl.  She drives a car."
DD: "Is she a Mommy?"
Me: "Yeah, she's sorta like a Mommy..."


And I didn't have anything really for dinner.  Yeah, I planned meals but life happened and the meals didn't, so we stopped at Kroger, hoping to find the McCormick's Italian Chicken seasoning packet for the crockpot which would allow me to serve a quick dinner before heading out.  Nope.  They were out.

So, I instead just left hoping I'd find the recipe online somewhere or how to improvise.  Of course, I didn't.

So, I stuck 3 chicken breasts in the crock pot with a package of dry Italian Dressing mix on top and cooked on low for about 5 hours.  Served with mashed potatoes (you know, the ones that come in an envelope?  Yeah... those).

And the kids actually ate it.

And the quesadillas I made with the shredded leftovers, Flat Out Tortillas and american cheese today for lunch.

  1. So, this is my favorite blog post title of yours... by far! And guess what I'm stopping at the store to get today... Italian dressing seasoning. Has to be tried. :) My delicious feta chicken will have to wait.
