Apricot & White Chocolate Chip Coffee Cake

My daughter ate some of mine this morning and then refused pancakes for lunch at Cracker Barrel because she wanted more coffee cake.  It's THAT good!  Happy baking!

1/2 cup white chocolate chips
1/2 cup apricot preserves

3- Fold in white chocolate chips.
4- Pour in to greased round 9" baking pan.
5- Drop apricot preserves on top by spoonful and drag knife through to create swirls.

Week 7: P365 at Disney!

You knew you couldn't pass up looking...

Credits: Project 365 Version 2011 from Joey Lynn Designs & Wild Blueberry Ink available at Owl Tree Studio

Day 1:
Castaway Cay, The Bahamas: It was the coldest, wettest day of the season, but worth it to repeat this photo from 2 years ago.
Day 2:
Welcome Home!
Kidani Village, Animal Kingdom Lodge
First time staying on points.
Day 3:
Happy Valentine’s Day!
We spent it at Magic Kingdom having lunch with Pooh Bear & then exploring Hollywood Studios!
Day 4:
A day spent at Epcot.
The older I get, the more I enjoy Epcot.
And look forward to the day when we have someone along to watch the kids so Kel and I can actually explore and drink our way through it!
Day 5:
The kids wanted to see Rafiki.
We take the train to see him and chaos ensued.  So, I got the monkey love.
Day7:
A tired princess waiting patiently to see her friends at Askerhus in Epcot.

Project 365: Week 5

Thank God the internet came back so I could stay current :)

Here's my week 5.  Like the template?  Check it out over at Owl Tree Studio!!!
Journaling:
day 1:
Guess who scored 7 goals?
And is 1 tired little monkey...
Momma too though I had a great party.
day 2:
Seriously?
Can I have a week without a food shot?
No wonder my pants were tight after the holidays!
day 3:
Happy baby girl.
Snug as a bug in a...
handmade quilt.
day 4:
I is for icicle!
This winter storm brought over half an inch of ice and another half inch of snow over 2 days, shutting down everything & resulting in major power loss over several states.
day 5:
A certain little guy adopted this giraffe.
Mommy is always busy even when there’s a snow day!
day 6:
You give Dr Beaks the respect he deserves! He didn't go through 7 years of penguin medical school for nothing!
day 7:
After the week we’ve had...
there will be wine & snacks.
Cheers!

What I can't live without:
An appropriate prompt for this week given that we are now day 3 of a cable & internet outage that has no estimated date of resolution.
We got hit with a major ice and snow storm and lost power Tuesday night for about 8 hours.  When it came back on at about 4:30am, I was so thankful since the house had already started to get cold.  So, this week, my “can’t live without” list would be:
- Electricity
- Caffeine
- Running water
_ A sense of Humor
- Yarn & crochet hook
- Cell phone with data package
- Something sweet
- Caring friends

New kit by Kerry Stewart :)

A little snow, a lot of ice, and a cable outage for almost 4 days!  We were all going stir crazy but luckily, I had a few kits to play with during the storm...  I also had some time and made my 4 year old a giraffe to rival his sister's octopus.

More pages from Tunisia

I am really struck by the current political situation in Tunisia and Egypt in a way I wouldn't be if we hadn't been in the country less than 6 months ago.

So, while working on these last few pages from our few hours in Tunisia, I'm keeping the people in those countries in my thoughts & prayers.

And the final pages from Tunisia
