Creole Beef Casserole

Adapted from Simple & Delicious
November 2010

Creole Beef Casserole
Serves: 8-12

Ingredients:
1 cans cream of chicken soup
2 cups light sour cream
1 tsp onion powder
1/4 tsp pepper
1 (30 oz) package frozen hash browns
2 cups cheddar cheese
1 lb ground beef (original calls for 1.5 lbs but I always cut back)
1 cup ketchup
1/4 c packed brown sugar
3 tsp Creole seasoning
1 tsp garlic powder
1 tsp oregano
1/4 tsp cayenne pepper
3/4 c crushed cornflakes
1/4 c melted butter

Directions:
Preheat oven to 350.
In a skillet, brown the ground beef over medium heat until the pink is gone.  Drain.
While beef is browning, in a large bowl, combine hashbrowns, onion powder, soup, cheese and sour cream.  Mix.  Turn in to a greased 9x13 baking dish.
Add the ketchup, brown sugar and remaining seasonings to the beef.  Spoon on top of potatoes in baking dish.
Top with combination of cornflakes and butter.
Bake at 350 for 45-60 minutes.

I think you could easily freeze this by allowing the beef to cool, then adding it to the top of the potatoes. You'd add the topping right before cooking.

Maple Pretzel Chicken

I married a Vermonter.
This means I now carry maple syrup with me to restaurants who are known to not have the "real stuff".
And that the jug of it currently in my fridge has some small portion of sap from the trees that are on the family's property up north.
And that any recipe that crosses my path including "maple syrup" needs to be tested.

It's easy to see why this one works- the nice combo of salty and sweet.  And the kids enjoyed helping me crush the pretzels up to use in the recipe, not to mention getting seconds of it for dinner.

Maple Pretzel Chicken
From Taste of Home Simple & Delicious Nov 2010

Ingredients:
4 boneless skinless chicken breasts (about 5 oz each)
1 egg
1/2 cup maple syrup
1-1/2 cup crushed pretzels

Spray a baking pan with non-stick spray and preheat oven to 375.
Mix together the egg and syrup in a small shallow bowl.  Place pretzels in another.
Dredge chicken through syrup/egg mixture then coat with pretzels and place in baking dish.
Bake until internal temp reads 190 degrees (about 40 minutes).

The original recipe calls for you to flatten the chicken, then fry stop top but I didn't want to do that- more dishes to clean up and this usually turns out just as nicely.

We served with mashed potatoes.

Cranberry Apple Crisp

One of my absolute favorite fall recipes.  I also love to tell myself it's healthy because there is fruit in it ;)  It works as a dessert, as a sweet breakfast or as a base for a nice scoop of ice cream!

Cranberry Apple Crisp
Serves about 10

Ingredients:
2 cups cranberries
3 cups sliced, peeled apples
1 cup sugar
1 T lemon juice
1/4 tsp salt
1 c light brown sugar
1 c quick cooking oats
1/2 cup flour
5 T room temp butter

Mix the first 5 ingredients in a large bowl.  Turn in to a greased
9x13 baking dish.  Mix together the remaining ingredients to make the
topping.  Pour over top of the fruit mixture.  Bake at 325 for 45-60
minutes or until top if brown and crispy and fruit is tender.

Getting Hoppin'

I apologize for being a tad neglectful this week.  It's been a busy, busy week.

I made Halloween costumes for example...
And had my debut party for my new Thirty-One Gifts business

And finished my nephew's blanket...

And finally taking my daughter's 2 year photos...

There were a couple of soccer games- go YELLOW!
And considered briefly shipping the kids off to their grandma's house for a bit.

But decided to participate in a blog hop with the awesome ladies from Owl Tree Studio instead. ;)

Perfect Punkin

How can your heart not just take a sigh when you see this?
Mine does.
Everyday.
But, perhaps I'm a tad baised.

Kerry's new kit- Fall Flourish Frames were perfect for framing this sweet girl.
And used Perfect Pumpkin to finish it up.
Not enough for you?  Check out Kerry's latest FREEBIE here!

Scrapping the Big Day...

I was so excited to start on the creative team for Kelly.  And loved her latest release... A Formal Affair

I created this layout using pictures from our wedding & was almost actually laughing at how young we looked then.  I love the photo of us with my grandparents.  I miss my grandpa every.single.day but know he's finally at peace and out of pain.

I think I'm going to play with the purple accents next- why not check them out?  They are 20% off at her store!

My small little thank you...

It's not Veteran's Day & it's not Memorial Day.

But today, all servicemembers are on my heart.  Their families.  Their friends.  Their sacrifice.

On Sept 11th this year, we were in Europe.  On a cruise.  Enjoying our family time.  DH and I took an excursion off the boat, without the kids and our guide made an unexpected stop at the American Cemetary in Tunis.  I have my own photos that I haven't uploaded yet, so I snagged this one from the DoD.

Of all wars, conflicts, eras...  you are NOT forgotten.  You are NOT alone.

I am so excited.  I love Kerry's New Template- Make Mine A Double available at TwoPeas today.

I used another kit- Candy Apple of hers to make this and a button from her Stay Connected Brads & Epoxy kit to finish it up.  I'm partial, but I like it!
DD turned 2 at the same time I got her hair to FINALLY go up in tiny pig tails :)

Homemade Chicken & Noodles

This is one of those recipes.  It's one my grandma always used to make and one I always asked for when I'd come visit during college and during my early, single years.  I still ask her to make it now because it's one dish I KNOW my kids will devour.  It's easy.  It's unhealthy.  And it's wonderful comfort food.

So, I made it tonight for my daughter's second birthday.

Time flies.

Homemade Chicken & Noodles
Serves: Not enough

Ingredients:
2-3 lbs of bone-in, skin on chicken thighs
1 package (1 pound) of Amish style egg noodles (regular will do if you can't get the Amish of Kluski style)
About 1-2 T of salt
About 6 cups of water

See?  It's one of those recipes.

Directions:
Put chicken in a large soup style pot.  Add enough water till it's covered and a tiny bit more.  Add salt.  Cook, covered with the lid slightly askew (you know what I mean) over medium-low heat for about 3 hours.  Alternatively, you can dump it in your crock pot on low for 6-8 hours or high for 3-4 hours.

Remove the chicken carefully from the water (it will fall apart easily).  Let it cool while you strain the broth through a mesh strainer.  (This part wasn't something my grandma did but I do and like the result).  I'll also take a paper towel around the edge of the pan where there's usually just evaporation gunk to avoid it falling in my yummy dinner.
Turn the temp up to get the broth boiling and dump in the noodles.

Once the chicken is cool enough to touch (or you're willing to burn your fingers because your family is HUNGRY and it smells amazing), separate the meat out from the skin, bones and fat and put replace in the pot.

Serve alone or over mashed potatoes.  (Yes, double starches- heavenly!)  I'm sure you could add some carrots, celery, onions, etc to this but why?  We love it just as it is!  Also makes great leftover, if there is any left of course!

Enjoy!

Perfect Day!

So I scrapped it with the kit "Perfect Pumpkin".  A new release from Kerry Stewart at TwoPeas.

Chicken & Wild Rice Soup

Adopted from the recipe at Betty Crocker.

I liked the concept of this recipe, but changed it just a bit to make it more family-friendly at our house.  Well, heck, to make it more mommy and daddy friendly!  And this delivered.  Yum!  A perfect fall lunch or dinner.  I doubled the batch and will be freezing some for quick lunches/meals when DH is TDY (business trip in civilian terms).

Chicken and Wild Rice Soup
Servings: About 12
Time- About 40 minutes (if chicken is cooked)

Ingredients:
1 tablespoon butter
2 tablespoons canola or soybean oil
1/2 cup Gold Medal® all-purpose flour
2 cups water
2 cups cut-up chicken (about 2 breasts)
3 1/2 cups Organic Chicken Broth (1, 32 oz container)
1 1/2 cups Wild Rice Blend
1 Tbsp Spice Mix
1 cup original soy milk or fat-free (skim) milk
Slivered almonds for garnish (optional)

Directions:
1.Melt butter in 5-quart Dutch oven over medium heat. Stir in oil and flour with wire whisk until well blended. Stir in water, chicken, water, broth, rice and rice seasoning.

2.Heat to boiling over high heat, stirring occasionally. Reduce heat to medium-low. Cover and simmer about 25 minutes or until rice is tender.

3.Stir in milk; heat just to boiling. Remove from heat. Sprinkle each serving with almonds.

Come on over & Hoot with Us!

There's nothing to lose & prizes to win!  Come see what it's all about :)

Day 4: Malta

Alright y'all...  I know you've been waiting on the edge of the chair for me to start back up with the trip report.  I got the pictures done, but am fading fast so please go easy on typo's and the like!  I realize there's a loading problem with a couple of pictures- I'll try and fix it tomorrow.

Day 4 started with us sailing in to Valetta, Malta on a gorgeous, sunny day- high near 80.  I took advantage of being adjusted to the new time zone and went to Pilates at the gym and ran about a half mile.  The treadmills look out over the water on the front of the ship which I admit was a bit disorienting.  It is a neat city- built up like a fortress.  DH woke up with the kids and said DD ran to the window, pointed and said "Sandcastle!" and could barely wait to go look at it more closely.

I met the kids at breakfast at Topsiders and on our way to fill up our water bottles, ran in to someone quite special indeed!

We got off the boat around 10 and made our way towards the climb in to town.

In hindsight, we should have done the hop-on, hop-off bus.  But, we made it to the statue of Independence and the entrance to the city after a steep uphill climb and having to bribe DS with snacks.  He just wanted to go back to the Kids Club.

Then, we continued our walk to the Chapel of St Francis of Asisi, then St John's Chapel both of which we wanted to see.  Gorgeous, but hard to fully appreciate while chasing toddlers. And in the courtyard, there were beautiful flowers!
(And a wheelchair access ramp which DS kept running up and down and screamed when we left.)

We then kept walking, trying to find a place for lunch and got a tad bit lost, but found some neat sites of the city.
And then we found the Government building which had these wonderful fountains- perfect for playtime which we desperately needed.  And on the corner, gelato!

We then headed back to the ship.  We hit Topsiders again for a lunch buffet.  The highlight was dessert (though my notes tell me the butter chicken was really good too).  I don't even remember what all that was, but I remember it was delicious!

We dropped DS off at the kids club just in time for a special guest.

We set sail early- around 4- byebye Malta!

We went to the family pool for a spell as well, but DH's back was bothering him, so we rescheduled his hot stone massage from the last day onboard to that day, no problem.  He felt a lot better afterwards, thankfully!
While DS was at the kids area, DD and I visited with some characters (missing from the line up are Goofy & Max, Sorcerer Mickey- I have pictures but didn't adjust them for the web to post here).  It was funny- last year, at the park, the escort for Stitch made everyone be extra careful to protect their left shoes.  They said he ate them.  So, when Stitch started pointing at DD's shoes and being interested, I thought he was going to eat her shoe (playing along).  No, he was excited that they lit up.  Oh well! :)

We dressed the kids for dinner and DS wasn't all about the princesses, but DD was, so DH & DS went to play shuffle board while we visited the lovelies.  We do have pictures of Snow White too.  Tiana and Alice were missing, but the others were out.  DD was so excited to show Cinderella her matching dress and painted fingernails.

And finally, Stitch caught up with us before dinner time.  DD wore her jammies since she was done with her dress, but of course, no one minded. :)
Dinner was at Parrot Cay and Minnie surprised with a guest appearance in full out Flamenco and showing her stuff.  It was pretty neat!  Dinner was pretty yummy.  I had:
Teriyaki Jerk Chicken Tenders
Papaya & Mango Soup
Crusted Rib Eye steak with twice baked potato and corn on the cob
And for dessert- Vanilla Smores Cake and Creme Brulee Cheesecake.
The Cheesecake won by a good margin.

Next port- TUNISIA!

And make some awesome pages.  Here's just a small sample of what you'll get with your membership this month.

Here's what I've done- my daughter's birthday invitation & started working on my family's calendars already.  We give them each year as gifts to the grandmas and grandpas in our lives & each year, they promise to love, honor and cherish them for the whole year.  If you're interested in having me create for you, let me know.  I've recently started exploring the possibility of "Scrap 4 Hire" and would love a few projects to get started on.  And finally, a great page (if I do say so, myself...) of my two littlest lovlies being adorable... what they do best!  Template is a slight aleration of a freebie available from Simply Kelly Designs!
