My daughter ate some of mine this morning and then refused pancakes for lunch at Cracker Barrel because she wanted more coffee cake. It's THAT good! Happy baking!
Apricot and White Chocolate Chip Coffee Cake
From: Simple and Delicious Dec/Jan 2011
Prep Time: 15 mins
Ingredients:
2 cups Heart Smart Bisquick
2 Tbsp sugar
1 egg
2/3 c skim milk
2 Tbsp canola oil
1/2 cup white chocolate chips
1/2 cup apricot preserves
Topping:
1/4 c Bisquick Heart Smart
1/4 c sugar
2 T cold butter
Directions:
1- In a small bowl, whisk together the dry ingredients.
2- Add in wet ingredients and whisk together until just mixed.
3- Fold in white chocolate chips.
4- Pour in to greased round 9" baking pan.
5- Drop apricot preserves on top by spoonful and drag knife through to create swirls.
6- In a small bowl, cut in the cold butter to the baking mix & sugar until crumbly & top the coffee cake.
7- Bake at 400 for 20 minutes or until top is golden brown.
