Cantonese Crock Pot Pork
Serves: 6-8
Ingredients
• 2 pounds pork steak, cut into strips
• 2 tablespoons vegetable oil
• 1 tsp onion powder
• 1 20 oz can pineapple chunks
• 2 (8 ounce) cans tomato sauce
• 6 tablespoons brown sugar
• 3 teaspoons distilled white vinegar
• 2 teaspoons salt
• 4 tablespoons low sodium Worcestershire sauce
Directions
1. In a large heavy skillet, heat oil over medium-high heat. Brown pork in oil. Drain off excess fat.
2. Place pork, onion powder, tomato sauce, brown sugar, vinegar, pineapple, salt and Worcestershire sauce in a slow cooker. Cook on High for 4 hours, or on Low for 6 to 8 hours.
Serve over rice.
* I served without adding the pineapple and over mashed potatoes due to my tender mouth from dental work. Even rice seemed like too much chewing at the time...

Do you do this even when your husband isn't home? I'm starting to think about my meal plans for next week, and Ben won't be home for dinner at all. So hard to justify cooking when it's just the kids and I, but I don't want to feed them junk! I know your husband (wasn't sure if you shared names on your blog) is gone sometimes... what do you do then?
ReplyDeleteTruly, this is a great question. I try. I try to plan more simple meals and things I know the kids will eat OR I plan something that will be great as a leftover (lasagna, chili, etc) so I know I'll eat better. I am finding I did better when I worked outside the home because I actually had slots for lunch, could eat bfast in the car, etc. Now that I stay at home, it's harder. I have found myself skipping meals accidentally more often when my husband is TDY and this isn't healthy behaviour for myself and not the example I want to set with my kids. Setting up things for us to do while he's gone is something I do a lot of which includes trips to see my family (especially my Grandma since I can stay for dinner, avoid traffic through that big City in the process, bathe the kids at her place which she loves and drive home peacefully knowing I didn't miss a dinner with my husband- something that's all too precious when your spouse is active duty). This is also why I freeze portions in 1-2 servings when I make those dinners that freeze well. Since I know the kids rarely eat dinner well, if I freeze 2 portions together, I thaw and reheat which leaves me enough to feed all 3 of us and do some in a healthy way.
