Fluffy Coconut Milk Pancakes!

Pancakes are a MUST at our house and I'm always finding new recipes for my husband to try.  These were yummy and a bit more dense/filling than a normal pancake, plus a great way to use up leftover light coconut milk.  You can also freeze coconut milk leftover from a recipe for later use.

Pancakes
Ingredients:
1 cup flour
1 Tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 cup light coconut milk
1 1/2 Tbsp canola oil
1 egg

Combine dry ingredients together.   Whisk together wet ingredients.  Slowly mix together until just blended.  Cook on a griddle, as usual for pancakes.
NI: 228 cals, 9.8 g fat, 425 g sodium
