Crock Pot Chicken & Dumplings

I have this master list created for once my husband comes home and we settle in to the craziness of the holidays and waiting for baby.  I stuck to the old favorites, but this was a new recipe I added.

Crock Pot Chicken & Dumplings
Serves- about 4 depending

Ingredients:
1 lb boneless, skinless chicken breast
2 cans cream of chicken soup
1 c peas (or other vegetable of choice)
1 tube refrigerated biscuits

Directions:
Put the chicken and soup in to the crock pot.  Let cook on high for 5 hours or low 6-8 hours. 
About 1 hr before serving, add vegetables and biscuits (torn apart).
Cook until biscuits don't look wet.

The kids liked this as well which was a huge plus for me.

I will experiment with using an alternative to the cream of chicken soup and a prepared biscuit mix from the organics section of our grocery store like this one: Red Mill Biscuit Mix
