It was hard for me to try this recipe on two levels. First, finding miso paste was incredibly difficult. I finally located it in the refrigerated section of the local health food store. Second, when it came time to actually marinate the beef, it was hard to risk a new recipe with an expensive cut of meat. But, I swallowed hard and went for it. It was fabulous! The recipe, as printed, is below. Serving suggestion is "Sugar Snap Noodle Salad" but I went for baked potatoes. No need to take two major culinary leaps in the same day. ;)
Grilled Miso-Marinated Filet Mignon
Servings: 4
Ingredients:
3 Tbsp finely chopped green onions
2 Tbsp miso paste
1 Tbsp rice vinegar
1 Tbsp honey
1 Tbsp low sodium soy sauce
2 tsp Dijon mustard
1 tsp dark sesame oil
4 (4-oz) beef tenderloin steaks, trimmed
Cooking spray
Directions:
1. Combine first 7 ingredients in a large zip top plastic bag. Add steaks to bag. Turn to coat. Let stand at room temp for 20 minutes, turning occassionally.
2. Preheat grill to medium-high heat.
3. Remove steaks from bag. Discard marinade. Place steaks on grill rack coated with cooking spray. Grill 5 minutes on each side or until degree of desired doneness is achieved.
NI: 207 cals, 10 g fat, 24 g protein, 3.5 g carbs, 71 mg chol, 2 mg iron, 330 mg sodium, 19 mg calcium
