I love this recipe because it has some fiber, iron, calcium, all good things for kids to start the day with. It goes together easily and you could double or triple the batch to give yourself some to freeze for use during the week. (Freeze by using a cut paper towel between pancakes and storing in freezer bag.) You could also add fresh fruit, some chocolate chips, etc to the batter to help entice your little picky eater... or even make a fun shape with the batter. Mickey Mouse ears come to mind for some reason ;)

Oatmeal Pancakes
Ingredients:
1/4 cup all purpose flour
1 cup quick cooking oats
1 Tbsp sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground cinnamon
1/8 tsp salt
1 cup nonfat buttermilk (we use powered from the baking section)
1 large egg
cooking spray
Directions:
1. Combine the first 7 ingredients in a bowl.
2. Combine the wet ingredients in another bowl.
3. Add together until just moist (DO NOT OVERMIX).
4. Heat non-stick griddle and spray with cooking spray.
5. Turn when the pancakes tops are covered with bubbles.
Yield: 3 servings (serving size 4 pancakes)
NI: 273 cals, 11 g fat, 10 g protein, 35 g carbs, 3 g fiber, 91 mg chol, 2 mg iron, 526 mg sodium, 184 mg calcium
